It all started with a pastrami sandwich in southeast Detroit.

Golden brown rye. Steaming pastrami. Spicy, smooth Russian dressing.

It was love at first bite.

It was this pastrami sandwich that started Jeff Meyer on a global journey that would end with Element 29. He traveled to the heart of delicatessens in New York City where he would spend time mastering the art of everything from pastrami sandwiches to tuna. While the techniques, history, and flavor were top notch, New York delicatessens have their own techniques and standards. What Jeff wanted was experience and flavors to inspire his own creations.

He would spend the next few years touring the Caribbean in search of new flavors. New York cuisine was heavily influenced by European culinary arts. Caribbean cuisine gave him experience with Creole, African, Latin American, Japanese, and Cajun flavor profiles and techniques. With herb and oil based marinades, the flavors added a uniqueness he had not found in New York.

After years abroad, Jeff – now known as Chef Jeff – returned to his roots in America. His journey to California, and to the founding of Element 29, was taking it back to that first bite in southeast Detroit. With experience from around the globe, it was time now to bring that experience and those flavors back to the basics and make it perfect.
